Spelt
Spelt will give your bread amazing honey & graham cracker notes. As Trevor J Wilson notes in Open Crumb Mastery, spelt lends elasticity to your dough. This can make your dough slack at higher hydrations.
Recommended bake: 15-25% of total flour in the loaf
Rye
Rye is the secret weapon of every baker that has ever read the Tartine book. A bit of rye flour in your dough will lend your dough a delicious, slightly fruity sourness. At higher amounts, rye will make your dough sticky and hard to handle.
Recommend bake: 5-10% of total flour
